Local ingredients take center stage in these new features with Idaho goat’s milk cheese, Kobe tenderloin and bison top sirloin. Other items come from farms throughout the region such as Snake River Farms in Boise, Niman Ranch in California and Samish Bay Cheese in Washington, giving dinners a taste of the Pacific Northwest and Rocky Mountain regions.
